Distilled in small batches to ensure the highest quality product, we’ve combined juicy roasted pineapple with feisty ginger warmth and bright lime leaf to provide the perfect balance between sweet and spice.

An Exotic History
Created to celebrate the opening of our new flagship store in Covent Garden, our latest flavour – normally associated with rum – highlights the significance of the market’s long history with this exotic fruit.
Back in the 17th century, whilst Covent Garden was thriving as London’s most prominent fruit and vegetable market, pineapples were a popular symbol of prosperity and decadence.
The pineapple held a major cultural significance for 17th century British society. To grow this exotic tropical fruit in the UK, one had to be wealthy enough to own and manage a hothouse – a luxury that only few could afford.
As a result, the pineapple became a symbol of wealth, opulence, and prosperity.
When Covent Garden’s Piazza was rebuilt in the 19th Century, the fruit was adopted as a symbol of the newly-upscale market and, to this day, you can still find a pineapple theme throughout the area.
Take a closer look on your next visit and you’ll find the fruit hidden in walls, doorways and lamp fittings of the Apple and Jubilee Markets.
On Saturday 7th May, we opened the doors to our new flagship store at 28 Henrietta Street, Covent Garden WC2.
Just like our previous site in Covent Garden’s Piazza, the new site will remain a joint initiative with the fantastic Double Dutch Mixers and will offer visitors a choice of exciting gin-based experiences.

Your New Favourite Summer Tipple
Our latest release is a smooth, crisp and indulgently aromatic homage to the market’s extraordinary history with the exotic fruit.
Packed full of tropical flavour and sweet aroma, an initial tickle of ginger and juniper is followed by a soft roasted pineapple and burst of citrusy lime leaf to finish.
For a refreshing summer serve, we recommend pouring 50ml of Pineapple, Ginger & Lime Gin over an ice-filled glass, top with Double Dutch Ginger Ale and garnish with a fresh slice of lime.

Bullards Pineapple Collins
Ingredients:
- 50ml Bullards Pineapple, Ginger & Lime Gin
- 25ml Pineapple Syrup (optional if you want more sweetness)
- 25ml Lime Juice
- 50-100ml Double Dutch Soda Water
- Ice
- Fresh Pineapple Slices
- Lime Wedge
Method:
- Fill a tall glass with ice to chill.
- Add the pineapple slices to a cocktail shaker along with the gin and pineapple syrup. Muddle together.
- Add a scoop of ice and shake.
- Pour into the ice filled glass.
- Top with Soda Water (add more for a longer drink)
- Garnish with a wedge of lime.
Top tip: We like to give the drink an extra touch by dipping the top of the empty glass in pineapple syrup and then in white sugar.
